Vinification
The alcoholic fermentation took one week, and the maceration 15 more days. During those 22 days, two daily pumping over were done, in reduction conditions. The grapes were separated in our 8 concrete and steel tanks following two criteria: geographical parcel origin and quality of the grape. Part of the good press wine was added, since it brought more structure to the wine. The malolactic fermentation took place naturally in the tanks once the wine was separated from the pommace.
Ageing
In December 2007, 60% of the wine was drawn off into oak barrels. (10% new French oak barrel and 90% of 1 and 2 wines), were it matured till December 2008. The remaining 40% wine matured in concrete tank in order to preserve the fantastic fruit of the wine, and to avoid an excess of wood.
The wine was fined the 15/12/2008, with natural white egg (2,5 eggs per 225 litres).
Tasting notes
Nose: Complex and fresh (no acetates neither volatiles).
Palate: Very good “mise en bouche” and tasting. Light and pleasant bitterness. Very good length. Delicate style.
