2 vineyards:
31 years old vines: Soils: sand, schist and discomposed slate. Altitude: 670m
18 years old vines: Slate and abundance of schist. Altitude: 480m
Vinification
Grapes were hand harvested using crates of 10 kg capacity. Kept in the winery at 2ºC during 72h. The grapes were hand sorted in the vineyard, in the winery and then directly pressed. Natural clarification in tank at low temperature during 12h. Fermentation in 600L French oak barrels. Low fermentation temperatures and partial malolactic.
Ageing
On the lees in 600L French 1 to 3 years oak barrels during 9 months. In “foudre” during 4 months. In concrete tank type “egg” during 7 months. No clarification, filtration or stabilisation. Some solid residue maybe encountered in the wine. Bottle ageing was 18 months prior releasing.
