Vinification

Fermentation during 15 days at temperature of 14-15°, 2nd Fermentation during 40 days at temperature of 16°.

Acidity: 7,5 g/ l

Residual sugar: 1,5 g/ l

Age of the vineyard: 60 years old.

Soil: Clay and calcareous mix.

Ageing

Lees maturation during 43 months.
